There are two ways of understanding how a brewery works.
a) spend the day at a brewery and help brew a beer
b) every other way, none of which are anywhere near as valuable
The early start, the faulty hot liquor tank, the waiting, the cleaning, the science lessons, the stuck mash, cleaning, the digging of mash tun, the cleaning, the clogged hopback, the cleaning, the racking, the cleaning. The cleaning.
And if you're lucky, the bacon sandwich. The beer tapped straight from the fermenter. The shared understanding beneath stainless, alongside the sounds and smells of an industrial process in (literally) full flow.
